Cucumber Tea Sandwiches

A selection of cucumber and egg & watercress sandwiches on brown bread sit on a early 1900′s hand-painted Limoges plate accompanied by the matching teacup. A Fortnum and Mason tea canister completes the picture, all perched on a crisp white linen napkin.

Mrs Press shares her favourite dainty afternoon tea sandwiches in the second of our collaborative recipes and illustrations for the Downton Abbey series.

Taking her cue from my favourite London department store and tea sellers, Fortnum & Mason who suggest adding zest to your cucumber sandwiches with vinegar and white pepper.

The perfect started to leisurely afternoon spent reclining in the chaise lounge discussing the finer details of ones happenings.

Ingredients – classic cucumber filling – makes 16 triangles

8 slices of brown bread
2 cucumbers
2 tsp fresh dill – chopped
100g cream cheese
pinch white pepper
1 tsp white wine vinegar

Peel and thinly slice the cucumbers into rounds, splash with the vinegar, sprinkle with pepper and set aside.

In a small bowl combine the cream cheese, dill and pepper. Spread the cream cheese mixture evenly onto 4 slices of bread then arrange the slices of cucumber on top.

Sandwich with the remaining slices of bread and neatly trim the crusts off. Slice into quarter triangles and arrange on your prettiest china.
