Viki’s Famous Chocolate Brownies

These delicious treats sit in a gorgeous English 1910 cut crystal bowl with lid, a gift from some favourite friends at LJW for my birthday. The vintage tin once held biscuits from Peek Frean & Co. London.

Notes

These brownies made an appearance at every single one of my childhood parties and gatherings. They are legendary amongst my group of friends, possibly because they are so easy to make but more likely because they are even easier to devour.

Ingredients – makes 25 squares

125g butter, melted and cooled
1 cup caster sugar
1 tsp vanilla extract
2 eggs
1 cup plain flour
1 tsp baking powder
1/4 cup chocolate quick*
1/4 cup cocoa
1 tbsp icing sugar for dusting

Thoroughly grease a 20cm square microwavable dish. Sift the sugar, flour, baking powder, quick and cocoa together in a large bowl. In a separate bowl lightly whisk the eggs, add the vanilla and melted cooled butter and whisk lightly to combine. Make a well in the centre of the dry ingredients then add the egg mixture  and stir well to combine. Pour into the prepared dish, cover with cling wrap and microwave on high for 4-6min depending on the intensity of your microwave (check after 3min to view its progress). Remove from the microwave and set aside to cool before dusting with icing sugar and slicing into 5cm squares. Store in an airtight container.

*Chocolate Quick is a Nestle product used to make chocolate milk. Substitute cocoa powder and increase to 1/2 cup cocoa.
