Smoked Salmon & Cream Cheese Sandwiches

A classic High Tea favourite of mine, these little finger sandwiches are quick and easy to assemble but pretty enough to impress!

Ingredients – makes 16

120g smoked salmon
80g cream cheese
2 tsp finely chopped fresh dill
extra dill sprigs for decoration
8 slices multigrain bread

In a small bowl mix the cream cheese and dill. Spread 4 slices of bread with the cream cheese mixture. Place the salmon evenly on top of the cream cheese then top with the remaining slices of bread. Neatly trim the crusts with a bread knife then slice each sandwich into 4 even fingers. Top each finger with a small sprig of dill. Simple yet oh so tasty!

  2. I agree, no high tea is complete without smoked salmon and cream cheese sandwiches. I love that you don’t include onion like so many people, I think it overpowers the flavour.

    • It’s such a staple and yes, perfect for the numerous races parties that are happening right now! I am not a fan of the onions but if you wanted a stronger flavour I find a few finely chopped capers add a delicious bite.
